In this case, pour the granulated sugar into the boiling liquid and boil for a few minutes until the sweetener is completely dissolved.

Prepared fruits of Cloudberry pour into a clean bowl, pour the sweet syrup and cover with a metal lid. Next, place the jars with billets in a large pot on a cloth napkin. Ingredients for making cloudberry tincture are berries in an amount of 0.5 kg, 1 liter of vodka and 100-150 grams of sugar or honey.

Wash and dry the raw material and put it in a container for infusion. It is recommended to use a rolling pin in order to crush the cloudberry a little. Then add sugar, close the jar and shake a couple of times. When after a few hours the berries will let out juice, then add the alcohol base and honey (if necessary).

Stir the mass, cover tightly and put in a dark room at room temperature. Insist the mixture for about 10 days. At the same time once a day the future tincture should be shaken.

Then strain the mixture through a gauze cloth, squeeze the cake. It is recommended to filter the liquid through absorbent cotton. Now pour the berry tincture into bottles and seal hermetically. The product is stored in a dark place for five years. The strength of the drink is about 35 degrees.

Wine

From cloudberry, you can make wine. This requires 5 kg of fruits of this culture, 3 liters of water and 1 kg of sugar.

There is no need to wash the berries before you start. They should be crushed by hand or with a rolling pin until a homogeneous mass is obtained. The berry mixture should be placed in an enamel bowl or a plastic container with a wide neck. Then add all the water and 350 grams of sugar and mix it. After that, cover the container with gauze and move it to a dark room. In this form the mass is stored for several days. In this case, 1-2 times a day, stir the mixture with your hands or with a wooden spatula, trying to drown the floating pulp on the surface. During this time, the first signs that the fermentation process has begun should appear. This can be determined by a hiss, the appearance of foam and a sour smell.

After that, strain the mass. Collected pomace will no longer be needed. Pour the berry juice into a container for fermentation. In this case, about 30 percent of the volume should remain empty for carbon dioxide and foam, which will be released in the process of obtaining a drink. Now add another 350 grams of sugar and stir the mass.

On the neck of the container install a water shutter or an ordinary rubber glove with a small hole on one of the fingers. Take the billet to a dark place at a temperature of 18-25 degrees.

After a week add the remaining sugar. Do this as follows: drain a glass of juice from the crock using a tube, dissolve the sweetener in it, and already the syrup obtained, pour it back into the juice.

On average, the fermentation of cloudberry wine lasts for 35-50 days. You can see when the drink is ready if the carbonation has stopped, if there is a sediment on the bottom, and if the wine has a lighter color.

After this, the alcoholic beverage is carefully drained without touching the sediment. If desired, you can add a little sugar, and increase the strength of the wine by adding vodka or alcohol. Adding an alcohol-containing component extends the shelf life of the product.

The young wine should be stored in the cellar or in the refrigerator for 4-6 months until it matures. The aged drink should be bottled, hermetically sealed and stored.
