Dori fish: useful properties and recipes for cooking

Recently, a new type of fish has appeared on the shelves - Dori. The name is unknown to many. In appearance, it is similar to flounder - just as flat. It has a massive head, short body and large eyes. Its unpleasant appearance and strange name arouses the interest of buyers, but many do not dare to try it. So what hides in itself an unusual fish Dory?

Dories: what kind of fish are they, what they look like, and where do they live?

Dory is a predatory species of fish. Dwells in the depths of the Pacific and Indian Oceans, off the coast of Australia and the Atlantic. The body is flattened, flounder-like. It has small, almost imperceptible, scales. The fins are sharp. Otherwise known as:

  • Sunflower;
  • Dori paltus;
  • Oreo-dory.

The fish carcass reaches 40 cm in length and weighs 1.5 kg: the older it is, the more it weighs.

Dory is popular in many countries. For example, in Germany, it is called the "king herring", the British have it - John Dory, the Greeks call it the fish of Christ. On the shelves you can often see it cut into fillets.

Varieties

There are two varieties of Dorri fish:

Dory

  1. Black Dory (Sunfish, Oreo Dory). It lives mainly in the Indian and Pacific Oceans, the Mediterranean Sea, off the coast of New Zealand, Japan, Oceania, Australia. Sometimes it is caught in the Black Sea: the western part and Crimea. It lives at a depth of 200 m, so the Dory refers to the depth of fish. By size, the Sunfish is up to 60 cm in length, weight - up to 4 kg. Distinguishes it from other species coloration. The body of the fish is brown with a green tint, the back is almost black and the belly - light. The fins are striped. The body has two distinct circles on both sides. It is also distinguished by its unconvex eyes. The fish is frozen for transport around the world.
  2. The South African sunfish is a larger species of Dory. This predatory fish feeds on small fish. It is much larger than the Black Dory: length - up to 90 cm, weight - up to 6 kg. Scales are small and soft. The dorsal fin is connected at the base, has sharp spines. Occurs in the Pacific Ocean, namely along the coast of South Africa, Cape of Hope and Mozambique.

What Kind of Breed.

The dory is a predatory deep-sea fish. It is distinguished by its flat body due to high water pressure, large head and bulging eyes (depending on the species). She has very fine and soft scales and sharp fins with spines.

It is believed that this is one of the most environmentally friendly fish. This is due to the place where it lives: at a depth of up to 200 meters do not reach the harmful waste.

The meat is light, almost white. There are few bones, and no small ones. The taste of the fish is similar to halibut or flounder.

What it looks like

The fish looks similar to plaice. However, it has little in common with the well-known product. The sunfish is a predator that lives deep in the ocean.

If you come across a whole fish on the counter, you hardly want to buy it: its head is huge, commensurate with its body, and its eyes are bulging. The skin is gray and smooth, almost without scales. Inside is white and tender meat. The advantage will be the lack of small bones, and the skeleton is well removed when cutting.

Where does the dory live?

Dory's habitat is the deep waters. Commercial fishing occurs in the Indian and Pacific Oceans, off the coast of Australia, Atlantic and New Zealand. Less often - in Japan and Oceania. Can also be found in Russia: in the western part of the Black Sea and off the coast of Crimea.
